Kale mash with lean smoked sausage

Classic kale with a lean chicken smoked sausage and cauliflower as a potato substitute, ideal for Phase 1.

The ultimate winter classic in a slimmer version: kale mash with lean smoked sausage. Cauliflower takes the place of the potato and a lean chicken smoked sausage keeps everything hearty and savoury. A pinch of nutmeg and a spoonful of mustard give that typically Dutch depth, without making the plate heavy.

For Phase 1, this dish is ideal because it combines minimal carbohydrates with a good dose of protein. The lean chicken smoked sausage and the cauliflower together deliver thirty-six grams of protein, which feeds your muscles and keeps your hunger at bay for a long time. This way you stay true to your high-protein diet whilst serving real comfort food on the table.

Lovely with a spoonful of wholegrain mustard on the side or some extra steamed green vegetables. A glass of buttermilk completes this mash meal perfectly.

  1. Boil the cauliflower and kale together until tender in fifteen minutes.
  2. Meanwhile, warm the smoked chicken sausage according to the packet.
  3. Drain the veg and mash with the milk, mustard and nutmeg.
  4. Season with pepper and salt.
  5. Slice the sausage and serve on top of the mash.

Bewaren

The mash keeps well covered in the fridge for two days. Reheat gently and stir in a splash of lean milk so the texture becomes creamy again.
