Grilled halloumi and courgette skewers

Grilled halloumi and courgette skewers prove that vegetarian grilling is anything but dull. Halloumi stays beautifully firm on the grill and gets lovely golden stripes, whilst the courgette becomes soft and juicy. With oregano and a touch of lemon zest, you taste a fresh Mediterranean summer in every bite. A surprisingly protein-rich dish without meat.

Halloumi delivers almost 29 grams of protein per serving and keeps carbohydrates low, exactly what matters in this phase. The combination of plenty of protein and few carbs gives a lasting feeling of fullness, whilst the courgette provides fibre and volume without burdening your macros.

  1. Mix the olive oil with oregano, lemon zest and pepper.
  2. Coat the halloumi and courgette in the oil mixture.
  3. Thread the halloumi and courgette alternately onto skewers.
  4. Grill them on a hot griddle pan for eight minutes, turning regularly.
  5. Serve as soon as the halloumi has beautiful grill marks.

Bewaren

Store grilled halloumi and courgette in a sealed container in the fridge for up to two days. Warm the skewers briefly so the halloumi becomes soft again.

Variatietips

Swap the courgette for cherry tomatoes or peppers for more colour. A pinch of smoked paprika or fresh mint gives the skewers a new flavour direction each time.
