Fresh gazpacho with poached egg

This fresh gazpacho with poached egg is exactly what you want on a warm day. The raw blended tomatoes, peppers and cucumber provide a cooling, flavourful base, while the soft egg makes the whole thing creamy. An ice-cold Spanish classic in a protein-rich jacket, without having to turn on the oven.

For Phase 1, this dish is ideally balanced. The egg delivers high-quality protein that supports your muscles and keeps you satisfied, whilst carbohydrates stay low thanks to the focus on vegetables. So this gazpacho fits effortlessly into a protein diet and gives you a light but satisfied feeling after lunch.

Lovely with a few roasted wholemeal toast slices on the side or a handful of fresh herbs stirred through the soup. A splash of extra olive oil and some coarsely ground pepper finish the plate completely.

  1. Roughly chop the tomatoes, pepper and cucumber and add them to the blender with the garlic.
  2. Add the vinegar, olive oil, salt and pepper and blend until smooth.
  3. Chill the gazpacho for at least 30 minutes.
  4. Poach the eggs briefly in gently simmering water with a splash of vinegar.
  5. Pour the chilled soup into bowls and place two eggs on top of each portion.
  6. Finish with torn basil and freshly ground pepper.

Bewaren

Keep the gazpacho covered for up to two days in the fridge. Poach the eggs preferably fresh just before serving.

Variatietips

Swap the poached egg for diced boiled egg or a spoonful of lean quark for extra creaminess. A pinch of cumin gives the soup a warmer note.
