Fried tofu with spinach, egg-free

Fried tofu with spinach is a savoury, creamy way to start the day, completely without egg or dairy. The tofu turns golden brown and flavourful thanks to turmeric and garlic, whilst fresh spinach brings brightness and volume to your plate.

In Phase 1, the focus is on plenty of protein and very few carbohydrates, and this protein-rich breakfast fits perfectly. Tofu delivers complete plant-based protein that nourishes your muscles and keeps you satisfied, whilst spinach adds barely any carbohydrates but plenty of fibre and bulk. You stay energised without losing balance, exactly what a vegan protein diet demands.

Lovely with a few slices of avocado or a handful of cherry tomatoes on the side for extra colour and freshness. A pinch of extra kala namak brings out the eggy flavour.

  1. Squeeze the tofu dry and crumble it loosely with a fork.
  2. Heat the olive oil in a pan over medium-high heat.
  3. Fry the tofu with turmeric and garlic powder for about 5 minutes until golden brown.
  4. Stir through the spinach until it wilts.
  5. Season with nutritional yeast, kala namak and pepper and serve warm.

Bewaren

Keep leftovers sealed in the fridge for a maximum of 2 days. Warm the tofu briefly in a hot pan so it keeps its texture.

Variatietips

Try swapping the spinach for kale or stir some finely chopped spring onion through the whole thing. A pinch of chilli flakes gives it a spicy twist.
