This fajita bowl with chicken and black beans is a colourful feast of flavours and tastes. Seasoned chicken strips, tender-crisp peppers and sweet red onion come together with a scoop of black beans, topped with cool Greek yoghurt and fresh coriander. A vibrant Mexican dish that perfectly fits a protein-rich diet.

In Phase 2 you can carefully add a bit more carbohydrates and this bowl makes smart use of that space. The modest portion of black beans delivers fibre and complex carbs that release slowly, while the chicken fillet provides a generous dose of protein.   1. Mix the chicken strips with fajita seasoning.
  2. Heat the oil and fry the chicken for 4 minutes, add pepper and onion.
  3. Fry for another 6 minutes until the vegetables are tender-crisp.
  4. Warm the black beans through briefly.
  5. Spoon everything into a bowl and top with yoghurt and coriander.

Bewaren

Store the chicken and bean mixture in a sealed container in the fridge for up to three days and add the yoghurt and coriander just before serving. The mixture reheats beautifully in a pan or microwave.

Variatietips

Swap the chicken for lean beef mince or grilled prawns, or trade the black beans for kidney beans. A handful of sweetcorn adds extra sweetness within Phase 2 allowance.
