Endive mash with lean bacon strips
Fresh endive mash with a little potato and lean bacon strips, fitting within Phase 2.

Fresh endive through a light potato mash with lean bacon strips for that essential savoury bite: this endive mash is ready in a flash and tastes familiar. The raw endive is stirred through at the end so it stays fresh and crispy, whilst quark and mustard provide a creamy, peppery base.
In Phase 2 there's room for a little potato, and this dish uses that space wisely. The lean bacon strips and quark together deliver thirty-four grams of protein, whilst the modest portion of potato provides just enough slow carbohydrates for energy. That balance between protein and carbohydrates keeps you satisfied and makes this mash an ideal meal within your high-protein diet.
Lovely with a boiled egg alongside for extra protein, or a spoonful of mustard for those who like a bit of kick. A fresh tomato salad rounds the plate nicely.
