Savoury egg bites with spinach

These savoury egg bites with spinach are easy to make in a muffin tin and you can eat them straight from the fridge. The light, fluffy eggs get a fresh green touch from spinach and spring onion, with a hint of nutmeg for extra depth.

As a high-protein snack, the egg bites fit excellently within strict Phase 1. Eggs and lean quark together form a solid protein source that suits a protein diet well, whilst carbohydrates remain minimal at just a few grams per portion. This makes these bites ideal for keeping satiety high between meals, without reaching for sugary snacks.

  1. Preheat the oven to 180 degrees.
  2. Whisk the eggs with the quark, pepper, salt and nutmeg.
  3. Chop the spinach and spring onion finely and stir through.
  4. Divide the mixture into six greased muffin tins.
  5. Bake for 18 minutes until the egg muffins are set and golden.

Bewaren

Store the egg bites in a sealed container in the fridge for up to 3 days. They freeze well; defrost overnight in the fridge or warm through briefly.

Variatietips

Stir finely chopped peppers or mushrooms into the egg mix instead of spinach. A pinch of paprika powder or cumin gives the bites a different savoury twist.
