  1. Halve the cucumber lengthways and scoop out the seeds with a spoon.
  2. Mix the tuna with quark, yoghurt, mustard and lemon juice until creamy.
  3. Stir through the spring onion and season with salt and pepper.
  4. Generously fill the cucumber halves with the tuna salad.
  5. Cut each half into manageable pieces and serve immediately.

Bewaren

Keep the tuna salad separate from the cucumber and store covered in the fridge for up to 1 day. Fill the boats just before serving so they stay crispy.

Variatietips

Try swapping the tuna for finely shredded cooked chicken or a tin of salmon. Fresh herbs like chives or parsley give the salad extra freshness.
