Creamy cauliflower soup with smoked salmon

This creamy cauliflower soup with smoked salmon proves that creamy and light go together just fine. The finely pureed cauliflower gives the soup a velvety, bound texture without potato or flour, whilst flakes of smoked salmon and fresh dill provide a luxurious, savoury finish. A splash of cooking cream rounds off the flavour beautifully.

In Phase 1, every protein-rich choice counts, and this soup delivers those proteins without unnecessary carbohydrates. The salmon brings valuable proteins and healthy fats, making the soup extra satisfying. This means this dish fits seamlessly into a protein diet where you want to eat low carb but don't want to compromise on flavour.

  1. Fry the onion and garlic until translucent in a soup pan.
  2. Add the cauliflower and stock and cook for 15 minutes until tender.
  3. Blend the soup until smooth and stir in the cooking cream.
  4. Season with pepper and salt.
  5. Ladle into bowls and distribute the smoked salmon and dill over the top.

Bewaren

Keep the pureed soup covered in the fridge for up to 3 days and warm it gently without letting it boil. Add the smoked salmon just before serving.

Variatietips

Try replacing the salmon with smoked mackerel or a spoonful of prawns. A pinch of smoked paprika or some finely chopped chives gives the soup a fresh spin.
