Courgette noodles with prawns and garlic is a fresh and light dish where thin courgette strands form the base for succulent prawns sautéed in garlic oil. A splash of lemon and a hint of red pepper make the whole thing vibrant and surprisingly full of flavour, whilst you still end up with a light plate that's ready in less than twenty minutes.
For Phase 1 this is an ideal choice, as the courgette keeps carbohydrates to a minimum whilst the prawns deliver a solid protein boost of over 32 grams. That protein combined with the moisture and fibre from the courgette creates a pleasant sense of fullness, so this protein-rich dish fits effortlessly into a protein diet without sitting heavy on your stomach.
Lovely with a spoonful of lean Greek yoghurt with dill as a fresh dip, or with a few grilled cherry tomatoes alongside your plate for a Mediterranean touch.

- Heat the olive oil and briefly sauté the garlic and red chilli.
- Fry the prawns for two to three minutes until pink and cooked through.
- Add the courgette noodles and fry for two minutes to heat through.
- Squeeze the lemon juice over and season to taste with pepper and salt.
- Toss everything together lightly and sprinkle with parsley.
- Serve immediately while the noodles are still firm.
