Cold omelette rolls with herb cheese are a handy snack for on the go or as a light lunch. Thin omelettes are rolled around fresh herb cheese, paprika and spinach, then sliced cold. Make them in advance and you always have a satisfying snack within reach.

For Phase 2, these rolls are a lifesaver. Eggs and herb cheese together deliver a solid dose of protein that keeps your hunger between meals at bay, whilst the vegetables add freshness and fibre without many carbohydrates. This way, these omelette rolls remain a practical building block within a protein-rich diet.

  1. Beat the eggs loose with salt and pepper.
  2. Fry two thin omelettes in a lightly oiled pan and let them cool.
  3. Spread herbed cheese over each omelette.
  4. Divide strips of peppers, spinach and chives over them.
  5. Roll the omelettes up tightly and chill for 20 minutes.
  6. Slice and serve cold.

Bewaren

Store the rolled omelettes well covered in the fridge for up to two days and slice just before serving.

Variatietips

Try swapping the herbed cheese for hummus or lean cream cheese. Strips of smoked salmon or turkey fillet in the roll add extra protein and flavour.
