A cooling cucumber soup with quark that you can eat straight from the blender. The cucumber provides freshness, whilst dill and chives add a savoury note. Creamy, light and ready in ten minutes, this cold cucumber soup is a breath of fresh air on a busy summer's day.

In Phase 1, every gram of protein counts, and the lean quark makes this soup surprisingly substantial. You get a generous dose of protein for long-lasting satisfaction, whilst carbohydrates stay deliberately low. That makes this cucumber soup a smart choice within a protein-rich diet, without feeling heavy on the stomach.

Lovely with a sliced boiled egg on top or some smoked salmon snippets for a richer lunch. A final squeeze of lemon juice lifts the freshness even higher.

  1. Partially peel the cucumber and cut into chunks.
  2. Put the cucumber, quark, garlic, dill and lemon juice into the blender.
  3. Add the cold water and blend until smooth.
  4. Season with salt and pepper.
  5. Leave the soup in the fridge for half an hour to chill.
  6. Pour into bowls and scatter chives over the top.

Bewaren

Keep the soup covered for a maximum of two days chilled in the fridge and stir it through before serving.

Variatietips

Add a handful of fresh mint or a spoonful of avocado for a fuller flavour. With lean Greek yoghurt instead of quark, the soup becomes just a bit fresher.
