This chilli con carne without beans is comfort food at its finest: a steaming pan full of lean minced beef, sweet paprika and courgette that slowly simmer into a deep, spicy sauce. Not a bland diet meal, but a full plate that really satisfies you.
For Phase 1, this dish is ideal. By leaving out the beans and using vegetables as the base, the carbohydrates stay very low, whilst the lean mince provides a solid protein portion that keeps your hunger at bay for hours. Exactly what a high-protein diet demands: maximum satisfaction without unnecessary carbohydrates. The cumin and smoked paprika powder add warmth and flavour depth, so you won't feel you're missing anything.
Lovely with a generous spoonful of low-fat quark or a handful of fresh coriander on top. If you fancy extra vegetables, serve a fresh salad of leafy greens and cucumber alongside.

- Heat the olive oil and fry the onion with garlic until golden.
- Add the mince and brown over high heat.
- Stir in the cumin, paprika powder and chilli flakes and cook briefly.
- Add the pepper, courgette, tomato puree and tinned tomatoes.
- Simmer with the lid half-on for about 25 minutes.
- Season with pepper and salt, then serve warm.
