Lovely with a spoonful of lean quark, fresh coriander and a squeeze of lime juice. A few slices of avocado or a fresh salad alongside complete the plate.

- Fry the onion, garlic and pepper gently in olive oil.
- Add the mince and brown crumbling on a high heat.
- Stir through the spices and tomato puree and fry briefly.
- Add the tomato chunks, beans and corn.
- Simmer gently for 25 minutes until the sauce is thick.
- Season with pepper and salt and serve warm.
