This chilli con carne with three types of beans is the ultimate batch to make a large pan of. Lean beef mince, kidney beans, black beans and sweet sweetcorn melt together in a spicy tomato sauce with cumin and smoked paprika powder. A full, colourful dish you'll enjoy for days.

In Phase 3 there is room for more generous portions of legumes, and this chilli makes grateful use of that. The combination of beef mince and three types of beans delivers a hearty protein portion with plenty of fibre, whilst the beans provide slow carbohydrates that keep you satisfied for longer. So this classic remains completely within a protein-rich protein diet: hearty, nourishing and satisfying.

Lovely with a spoonful of lean quark, fresh coriander and a squeeze of lime juice. A few slices of avocado or a fresh salad alongside complete the plate.

  1. Fry the onion, garlic and pepper gently in olive oil.
  2. Add the mince and brown crumbling on a high heat.
  3. Stir through the spices and tomato puree and fry briefly.
  4. Add the tomato chunks, beans and corn.
  5. Simmer gently for 25 minutes until the sauce is thick.
  6. Season with pepper and salt and serve warm.

Store the chilli for up to 4 days cooled in the fridge; the flavour becomes fuller every day. You can freeze it beautifully for up to 3 months in portions.

Variatietips

Replace some of the mince with extra beans for a lighter version. A square of dark chocolate or a pinch of cinnamon gives the sauce extra depth.
