Chicory with ham and lean cheese from the oven

Classic chicory with ham and cheese in a light baked version with wholemeal, suited to Phase 3.

Baked chicory with ham and cheese is an indestructible classic, and this lighter version keeps all the good bits while skipping the heavy stuff. The chicory is wrapped in lean ham and topped with lean cheese, whilst a creamy sauce based on quark takes the place of a heavy roux. A crispy layer of wholemeal breadcrumbs browns the top golden and crunchy.

Phase 3 allows room for a bit more carbs, and this baked dish uses that space wisely with wholemeal and a touch of bread. Ham, cheese and quark together deliver thirty-eight grams of protein, which ensures solid satisfaction, whilst the wholemeal crumbs add slow-release carbs. This way, this comfort dish fits perfectly within your high-protein diet.

Lovely with a fresh green salad and a light mustard dressing on the side. A little extra freshly ground nutmeg over the chicory takes the flavour up a notch.

  1. Cook the chicory for ten minutes until tender and drain well.
  2. Wrap a slice of ham around each head and place in a baking dish.
  3. Mix the quark with mustard, nutmeg and pepper and pour over the chicory.
  4. Sprinkle the cheese and breadcrumbs over the top.
  5. Gratinée for fifteen minutes in an oven at 200 degrees until golden brown.

Bewaren

Store the gratinated chicory covered for a maximum of two days in the fridge. Preferably reheat in the oven so the cheese layer becomes nice and crispy again.

Variatietips

Try replacing the ham with lean turkey fillet or prosciutto for a saltier touch. A handful of finely sliced leek added to the dish gives extra vegetables and mild sweetness.
