  1. Cook the chickpea pasta al dente and drain.
  2. Fry the salmon cubes in the oil briefly on all sides and season with pepper and salt.
  3. Add the garlic and spinach and let the spinach wilt.
  4. Stir through the crème fraîche and lemon juice with a splash of pasta water.
  5. Gently toss the pasta through the sauce.
  6. Season to taste with pepper and serve hot.

Store covered for up to two days in the fridge. Reheat gently with a splash of water so the salmon stays juicy and the sauce becomes creamy.
