Mediterranean chicken with wholegrain orzo brings the sun to your plate with juicy chicken chunks, grilled courgette and peppers. A handful of crumbled feta and fresh parsley make it a sunny, Mediterranean dish that tastes like holiday.

In Phase 4, the lifestyle or maintenance phase, everything revolves around lasting balance, and this dinner is a perfect example of it. The lean chicken delivers plenty of protein for muscle maintenance and satiety, while the wholegrain orzo provides measured, fibre-rich carbohydrates. The courgette and peppers add fibre and colour, whilst a modest bit of feta gives just that salty accent that makes the plate complete. This way you effortlessly stick to a high-protein diet as a fixed part of your daily routine.

Lovely with a fresh Greek salad or a dollop of tzatziki on the side. A splash of olive oil and a squeeze of lemon over the whole thing finish it off.

  1. Cook the wholemeal orzo until just tender and drain.
  2. Fry the chicken cubes with oregano in the olive oil until golden brown all over.
  3. Add the courgette and pepper and fry for 6 minutes.
  4. Toss the orzo through the pan and warm everything through.
  5. Scatter over the feta and parsley.
  6. Season with pepper and serve warm.

This dish keeps for 2 to 3 days in the fridge and is ideal as meal prep for midweek lunches. Reheat gently so the chicken stays tender.
