Chicken shawarma tray bake with peppers and onion is comfort food with minimal effort. Spiced chicken thigh fillet, sweet pepper strips and red onion wedges go into a spacious roasting tin together with chickpeas, where everything caramelises beautifully. The shawarma spices deliver a warm, familiar flavour and the roasted vegetables become wonderfully soft and sweet.

In Phase 2 of the protein diet, healthy carbohydrates and fibre can play a role again, and this tray bake makes clever use of that. The chicken delivers forty grams of protein per serving for muscle maintenance and fullness, whilst the chickpeas provide slow-release carbohydrates and fibre that keep you feeling full for longer. A balanced, protein-rich dish that suits the slightly more generous Phase 2.

Lovely with a spoonful of full-fat garlic yoghurt or a fresh quark dip on the side. A handful of rocket over the warm tray bake makes it feel that bit lighter and fresher.

  1. Preheat the oven to 220 degrees.
  2. Mix the chicken, peppers, onion and chickpeas with olive oil and shawarma spices.
  3. Spread everything on a baking tray lined with baking paper.
  4. Season with salt and pepper.
  5. Bake for 25 minutes until the chicken is cooked through and the vegetables are roasted.
  6. Stir and serve warm.

Bewaren

Store the traybake covered in the fridge for up to three days. Reheat in the oven or pan to keep the vegetables with a bite.
