Chicken and quinoa stew with paprika

This chicken and quinoa stew with paprika is a colourful one-pot dish where all the flavours come together. The quinoa cooks in the spiced tomato sauce and soaks up the aromas of cumin, paprika and chicken completely. The result is a hearty, filling stew that barely leaves you with washing up, yet tastes wonderfully rich.

For Phase 3 you can add more generous wholemeal carbohydrates, and quinoa is an excellent choice for that, it's protein-rich by nature and delivers a complete amino acid profile together with the chicken. That combination of protein and complex carbs gives you sustained energy and satisfaction, exactly what fits within a protein diet where you can add a bit more.

Lovely with a dollop of lean yoghurt and some fresh parsley or coriander on top. A pinch of extra cumin or a splash of sriracha takes the stew to a spicier level.

  1. Brown the chicken pieces on all sides in the olive oil.
  2. Add the onion and pepper and fry for a few minutes.
  3. Stir in the cumin, quinoa and chopped tomatoes.
  4. Pour in the stock and simmer gently for 20 minutes until the quinoa is cooked.
  5. Season with pepper and salt and serve.

Bewaren

Keep the stew covered in the fridge for up to 3 days, the quinoa will absorb moisture, so add a splash of broth when reheating. You can freeze it for up to 2 months.

Variatietips

Try swapping the quinoa for wholemeal bulgur or add a tin of beans for extra fibre. With roasted paprika or a handful of sweetcorn, the stew becomes even sweeter and more colourful.
