Creamy Chicken Curry with Cauliflower Rice and Peas

This creamy chicken curry with cauliflower rice and peas is a fragrant, warming dinner that fills your kitchen with the aromas of red curry paste and coconut. Tender chicken fillet simmers in a creamy sauce and is served on fluffy cauliflower rice, making a protein-rich meal that fits perfectly into your protein diet.

In Phase 2, peas are back on the menu, and these little legumes make this dish complete. They deliver plant-based proteins and fibre that add just enough carbohydrates for the combination phase, whilst lean chicken fillet provides a generous dose of animal protein. The cauliflower rice keeps everything light, so you stay satisfied for longer without feeling heavy.

Lovely with a handful of fresh coriander and a lime wedge for freshness. If you like a bit of heat, add a pinch of chilli flakes or a spoonful of extra curry paste.

  1. Fry the onion until glazed in the olive oil and stir in the curry paste.
  2. Add the chicken cubes and seal them on all sides.
  3. Pour in the coconut milk and simmer gently for 10 minutes.
  4. Stir in the peas and warm them through for 3 minutes.
  5. Heat the cauliflower rice briefly in a separate pan.
  6. Serve the curry over the cauliflower rice and sprinkle with fresh coriander.

Bewaren

Store the curry covered in the fridge for up to 2 days, the flavour develops nicely. Store the cauliflower rice separately and warm both briefly in the pan or microwave.

Variatietips

Swap the chicken for tofu cubes or prawns, and swap the peas for edamame or pepper pieces. A green curry paste instead of red gives a fresh, spicy accent.
