Chia pudding with mango
Balanced Phase 4 dessert with chia seeds, quark and mango for extra fibre and protein.

This chia pudding with mango is a creamy and tropical dessert that you can easily prepare in advance. The chia seeds swell up in milk to a thick, pudding-like texture, complemented with smooth quark and fresh, sweet mango chunks on top.
The pudding fits well into Phase 4, the balanced phase where more nutrients come together. With twenty-five grams of protein from the quark, it forms a solid foundation for a protein diet, whilst the chia seeds provide fibre and healthy fats and the mango adds natural carbohydrates. That combination of protein, fibre and fruit creates a long and pleasant feeling of fullness.
Lovely with a few chopped pistachios or some coconut shavings for an extra tropical touch.

- Mix the chia seeds with the milk, honey and vanilla.
- Stir well again after five minutes so no lumps form.
- Leave to set in the fridge for at least 4 hours or overnight.
- Stir through the quark and top with the mango chunks.
