Celeriac fries with crispy chicken brings the ultimate fries experience to your protein diet, but with significantly fewer carbohydrates than potatoes. The celeriac turns golden brown and crispy in the oven, whilst a thin wholemeal coating makes the chicken beautifully crispy.

Phase 3 offers a bit more room for carbohydrates, and this dish plays cleverly with that via a touch of wholemeal breadcrumb coating. The chicken together with the egg delivers nearly forty grams of protein, and the fibre-rich celeriac provides lasting satisfaction. That balance makes this a protein-rich dish that tastes like a treat yet still sits neatly within your plan.

Lovely with a light yoghurt dip with garlic and herbs, or a fresh salad to balance the savoury plate.

  1. Cut the celeriac into chips and toss with olive oil, salt and pepper.
  2. Bake the chips for 30 minutes at 200 degrees, turning halfway through.
  3. Coat the chicken in the beaten egg and then in the breadcrumbs with paprika powder.
  4. Bake the chicken alongside in the oven for the last 18 minutes until golden brown.
  5. Serve the chips and chicken with the yoghurt dip.

Bewaren

The chips and chicken taste best straight from the oven. Keep leftovers in the fridge for up to a day and crisp them up again in the air fryer or oven.

Variatietips

Feel free to use parsnip or pumpkin instead of celeriac. For extra flavour, mix some Parmesan cheese or paprika powder into the breadcrumbs.
