Mash without the heavy feeling afterwards: this cauliflower mash with smoked chicken is creamy, savoury and surprisingly light. The cauliflower is softly mashed with lean quark and smoked chicken fillet, with a fresh touch of chives and a hint of nutmeg. A familiar Dutch meal that fits perfectly within a high-protein eating pattern.
In Phase 1, it's all about as few carbohydrates as possible and as much protein as you can get, and this mash does exactly that. The cauliflower replaces the potato and keeps carbohydrates low, whilst chicken and quark together deliver just over thirty-eight grams of protein. Those proteins create a long-lasting feeling of fullness, so you can get through this phase of the protein diet without hunger.
Lovely with a handful of steamed green beans or a fresh salad of cucumber and radish on the side. An extra spoonful of quark with chives rounds the plate off perfectly.

- Boil the cauliflower florets until tender in ten minutes and drain well.
- Roughly mash the cauliflower with the quark, mustard and nutmeg.
- Stir through the chives and season with pepper and salt.
- Warm the smoked chicken through briefly or stir it in cold over the mash.
- Serve the mash straight away, lovely and creamy and warm.
