A cauliflower gratin with chicken is comfort food at its finest: soft cauliflower florets, tender pan-fried chicken fillet and a creamy layer of melted cheese that comes out of the oven golden brown. While the dish simmers away in the oven, all you have to do is wait for that wonderful aroma drifting through the kitchen.

For those wanting to eat protein-rich, this dish is a lifesaver in Phase 1. The combination of chicken fillet, herb cheese, egg and mature cheese delivers plenty of protein for sustained fullness, whilst the cauliflower takes the place of potatoes or pasta and keeps carbohydrates very low. Exactly what a strict protein diet needs in this starter phase: plenty of satiety, few carbohydrates and yet an indulgent feel.

Lovely with a fresh green salad with cucumber and lemon dressing, or a handful of steamed green beans alongside. A sprinkle of extra parsley finishes the plate perfectly.

  1. Preheat the oven to 200 degrees and boil the cauliflower florets for 6 minutes until just tender.
  2. Fry the chicken pieces with garlic and paprika in a pan until cooked through.
  3. Whisk the herbed cheese loose with the egg, salt and pepper until a smooth sauce.
  4. Divide the cauliflower and chicken into a baking dish and pour the sauce over.
  5. Sprinkle with grated cheese and bake for 20 minutes until golden.
  6. Garnish with fresh parsley and serve warm.

Bewaren

Store leftovers covered in the fridge and eat within two days. Reheat in the oven or microwave until the gratin is hot through.

Variatietips

Try replacing the chicken with cubed turkey fillet, or stir a handful of fresh spinach through the sauce for extra veg. A pinch of nutmeg gives the cheese layer a warm note.
