  1. Flatten the chicken fillet and sprinkle with salt, pepper and herbs.
  2. Top with mozzarella, tomato and basil and roll up tightly.
  3. Secure the rolls with a cocktail stick.
  4. Heat the oil and fry the rolls on all sides for 12 to 14 minutes until cooked.
  5. Let rest briefly and serve.

Bewaren

Store cooked rolled parcels in the fridge covered for up to two days and remove the cocktail sticks only when reheating. Warm them gently in a pan so the chicken stays tender.

Variatietips

Swap the mozzarella for a slice of provolone or add a thin slice of raw ham for extra flavour. Fresh oregano instead of basil gives a different aromatic touch.
