Butternut squash spaghetti with salmon is a warm, autumnal dish with a lightly sweet base. Strands of squash replace the pasta and form a lovely counterpoint to the rich salmon, whilst a handful of wholemeal croutons add just that crispy contrast that completes the plate.

  1. Fry the salmon in a pan until cooked and roughly flake with a fork.
  2. Stir-fry the pumpkin ribbons with garlic and olive oil until just tender.
  3. Add the salmon and rocket and fold through.
  4. Season to taste with salt, pepper and lemon zest.
  5. Sprinkle the wholemeal croutons over just before serving.

Bewaren

This dish is best eaten fresh, as pumpkin ribbons become soft when stored. Keep any leftovers covered and eat them the same day, adding croutons just before serving.

Variatietips

Replace the salmon with mackerel or smoked trout. A handful of roasted pumpkin seeds or some fresh sage gives the dish an extra autumnal note.
