Stir-fried beef strips with pak choi and ginger is a crispy wok dish full of Asian freshness. Ginger, garlic and soy sauce give the dish depth and kick, whilst the pak choi stays wonderfully crispy. A colourful plate that's ready in a quarter of an hour and yet tastes as though you've spent ages on it.

This wok fits perfectly into Phase 1 because the beef strips provide a solid dose of protein whilst rice and noodles are left out, keeping carbohydrates low. So you enjoy a complete protein-rich dish that sits seamlessly with a protein diet. The lean beef and fibre-rich vegetables keep you satisfied for a long time without a heavy feeling.

Lovely with an extra splash of lime juice and some fresh coriander on top, or a spoon of sesame seeds for a nutty crispness.

  1. Heat the sesame oil in a wok until hot.
  2. Wok the beef strips for 2 minutes until sealed and set aside.
  3. Briefly fry the ginger, garlic and red pepper.
  4. Add the pak choi and wok for 3 minutes until crispy.
  5. Return the meat and deglaze with soy sauce.
  6. Drizzle with lime juice and serve immediately.

Bewaren

Store the wok covered in the fridge and eat within two days. Brief reheating in a hot pan keeps the veg crispy.

Variatietips

Vary the pak choi with broccoli or green beans. Add a pinch of five-spice powder for a warm, spicy note.
