Beef stew with lentils and carrot

This beef stew with lentils and carrot is a complete meal from one pan. Lean beef stews slowly until butter-soft, while carrots add sweetness and brown lentils bind the sauce nicely and make it filling. With thyme and bay leaf, the whole thing gets a deep, savoury flavour that's moreish.

In Phase 4, the maintenance phase, it's about a pleasant balance between protein and carbohydrates, and this stew brings that together perfectly. The beef and lentils together deliver a hearty protein portion, whilst the lentils and carrots add slow carbohydrates and fibre that keep you satisfied for longer. So your protein-rich protein diet remains effortlessly enjoyable, with a generous serving of comfort on your plate.

Lovely with a spoonful of lean quark or yoghurt and some fresh parsley over the top. A fresh salad or steamed green vegetables alongside complete the plate.

  1. Brown the meat in olive oil all over and remove from the pan.
  2. Fry the onions and garlic gently and stir through the tomato puree.
  3. Return the meat and add the tomato chunks, stock, thyme and bay leaf.
  4. Stew with the lid on for about 1.5 hours until the meat is nearly tender.
  5. Add the carrots and lentils and stew for a further 30 minutes until everything is cooked through.
  6. Season with pepper and salt and serve warm.

Bewaren

Store the stew for up to 3 days cooled in a sealed container in the fridge; the flavour becomes fuller after a night. You can freeze it for up to 3 months in portions.

Variatietips

Swap the brown lentils for green lentils for a bit more bite. A splash of balsamic vinegar at the end gives the sauce extra shine and depth.
