This baked salmon with lemon and dill is one of those dishes that looks luxurious but gets on the table in less than twenty minutes. The salmon fillet cooks gently in its own parchment paper parcel, whilst lemon juice and fresh dill keep the fatty fish fresh and light.   1. Preheat the oven to 200 degrees.
  2. Place the salmon fillet on a sheet of baking paper and brush with olive oil.
  3. Drizzle with lemon juice, grate some lemon zest over it and sprinkle with dill, salt and pepper.
  4. Fold the baking paper into a parcel and place on a baking tray.
  5. Bake the salmon for 15 minutes until just cooked through and serve immediately.

Bewaren

Store the cooked salmon covered in the fridge for a maximum of two days. Eat it cold from a salad or reheat it gently to prevent it from drying out.

Variatietips

Try swapping the dill for fresh parsley or chives, or add a thin layer of mustard for extra kick. A pinch of smoked paprika gives the salmon a deeper flavour.
