Sweet potato and chicken bake

This sweet potato and chicken bake is comfort food at its finest, and whilst the dish bakes to golden brown in the oven, your hands are free. Tender chicken pieces, soft sweet potato and fresh spinach come together in a creamy layer, topped with a crispy crust of mature cheese. A hearty, balanced meal with no fuss.

For Phase 4, the maintenance phase, it's all about balance, and this dish delivers that perfectly. The chicken provides a solid dose of protein, whilst the sweet potato brings valuable complex carbs and fibre. That ratio keeps you satisfied and energised, exactly what a protein diet needs in the maintenance phase without feeling sparse.

Lovely with a fresh green salad with a mustard and lemon vinaigrette alongside. A pinch of freshly ground pepper or some finely chopped chives over the dish rounds out the plate.

  1. Preheat the oven to 200 degrees.
  2. Cook the sweet potato for 8 minutes until just tender and drain.
  3. Fry the chicken with the onion and garlic in the olive oil briefly and stir through the spinach.
  4. Mix the chicken, sweet potato and cooking cream in an oven dish.
  5. Sprinkle with the cheese and bake for 20 minutes until golden brown.

Bewaren

Store the baked dish covered in the fridge for up to 3 days and reheat portions in the oven or microwave until piping hot throughout. Can be frozen for up to 2 months.

Variatietips

Try replacing the sweet potato in part with pumpkin or add some broccoli florets for extra vegetables. Grated mature cheese or a pinch of nutmeg will give the dish more depth.
