This air fryer chicken fillet with wholemeal couscous is a balanced meal that comes together in no time. The air fryer makes the chicken fillet marinated in ras el hanout juicy and fragrant, whilst the wholemeal couscous swells in boiling water. Fresh cherry tomatoes complete the plate, and washing up is limited to a single dish.

In Phase 4, it's all about balance, and this dish brings that together beautifully. The chicken fillet provides plenty of lean protein and the wholemeal couscous offers slow-release carbohydrates and fibre that give you energy and keep you full for longer. That combination makes this a hearty, balanced choice within a protein diet.

Delicious with a spoonful of lean yoghurt with mint drizzled over or a fresh salad of cucumber and red onion on the side.

  1. Rub the chicken fillet with olive oil, ras el hanout, salt and pepper.
  2. Preheat the air fryer to 180 degrees and cook the chicken for 14 minutes, turning halfway through.
  3. Meanwhile, pour 75 ml of boiling water over the couscous and let it soak for 5 minutes.
  4. Fluff the couscous with a fork.
  5. Slice the chicken and serve on the couscous with the cherry tomatoes.

Bewaren

Store the chicken and couscous covered for a maximum of 2 days in the fridge. Briefly reheat the chicken and serve the couscous cold as a salad if you like.

Variatietips

Replace the ras el hanout sometime with shawarma spices or tandoori for a different flavour direction. Stir some finely chopped mint or pomegranate seeds through the couscous for freshness.
