A wholemeal bagel with roast beef and horseradish is a robust, protein-rich lunch with a refined kick. The lightly toasted bagel gets a fresh horseradish cream made from lean curd cheese, then lean roast beef, rocket and cucumber fill and freshen the whole thing. The horseradish adds a pleasant sharpness that perfectly complements the savoury roast beef.

In Phase 4 of the protein diet it's all about maintenance and balance, and this bagel fits in effortlessly. The roast beef and curd cheese together provide plenty of lean protein, whilst the wholemeal bagel offers slow carbohydrates and fibre.   1. Halve the bagel and lightly toast both halves.
  2. Mix the quark with horseradish, salt and pepper until you have a fresh cream.
  3. Spread the horseradish cream on the bottom half.
  4. Top with rocket, roast beef and cucumber.
  5. Place the top on and press gently.
  6. Cut in half and serve.

Bewaren

Keep the horseradish cream covered in the fridge for up to 2 days. Spread on the bagel just before eating to keep it nice and firm.

Variatietips

Try swapping the roast beef for smoked chicken breast or carpaccio. Grated apple mixed into the horseradish cream gives a fresh, slightly sweet contrast.
