Creamy salmon soup with white beans is a bowl of comfort for cooler days. Soft pieces of salmon, creamy white beans and sweet corn come together in a lightly creamy fish stock, finished with fresh chives. It's a savoury, nourishing soup with enough body to pass as a proper meal.

  1. Sauté the onion in olive oil until translucent in a soup pan.
  2. Add the fish stock, white beans and sweetcorn and bring to the boil.
  3. Simmer gently for 10 minutes.
  4. Add the salmon cubes and cook for 4 minutes.
  5. Stir through the cooking cream and warm the soup through without boiling.
  6. Sprinkle with chives and serve in two bowls.

Bewaren

Store the soup covered for up to three days in the fridge or freeze it for up to three months. Warm without boiling, so the salmon doesn't dry out and the cream doesn't split.

Variatietips

Try swapping the white beans for chickpeas or add a handful of spinach for extra green. A pinch of smoked paprika or a splash of lemon gives the soup more depth and freshness.
