Beetroot salad with herb quark and walnut

Refreshing Phase 3 salad with beetroot, creamy herb quark and crispy walnut.

This beetroot salad with herb quark and walnut is a surprising duo of earthy and creamy. Cooked beetroot and fresh apple sit around a ball of smooth herb quark with chives and honey, finished with roughly chopped walnuts and peppery rocket. Fresh, filling and nicely balanced.

In Phase 3 of the protein diet, you can build up carbohydrates further, with room for some fruit and fibre-rich vegetables. The lean quark provides well over 30 grams of protein here and creamy satiety, whilst beetroot and apple contribute mild, natural carbohydrates and the walnuts provide healthy fats. This keeps this protein-rich salad light yet satisfying, perfectly suited to this phase.

Lovely with a few fresh mint leaves or an extra pinch of walnut for more crunch. A drizzle of balsamic over the beetroot takes the flavour to a slightly deeper, sweet note.

  1. Stir the quark with chives, honey, salt and pepper until smooth.
  2. Divide the rocket over a plate.
  3. Transfer the herb quark to the centre.
  4. Place the beetroot and apple around it.
  5. Sprinkle the walnuts over the top.

Bewaren

Keep the salad covered in the fridge for up to 1 day and keep the walnuts separate so they stay crispy and don't soften in the moisture from the beetroot.

Variatietips

Try swapping the walnuts for roasted hazelnuts or pecans. A handful of pomegranate seeds adds extra fresh sweetness and colour to the salad.
